niiiice...i love watchin these things....i like the taste of octopus but dont think ill ever get over how it looks in full form before its cooked lol....as long as i dont see that its fine....do u chef or just cook at home for shits and giggles?

And to answer this question which I so rudely never answered, I did my classical training but after my internship was up I got out of the industry, see, I wanted a social life and at that time that social life revolved around a Brazillian girl.

I got into web development after being an apprentice shoe maker.  Interesting transition.  Well, I took two interests and made them into one, I've been running a food site for about 3 years now, onlinecooking.net. I then started a few other foodie site, one of which is betterbeerfood.com

So if you're asking if I cook professionally, it really depends on how you look at it.  I do cater from time to time, and I guess the show could be considered professional.  I am incorporated.

Added another episode.  Lamb Sliders aka mini lamb burgers.  Couldn't find any Aussi beer other than Fosters and I can't stand Fosters, so we had to go with a kiwi beer.  It wasn't too bad and the lamb sliders were good too.  http://www.betterbeerfood.com/ep6.php

Heh... i didnt expect that site is still up... ;P

Anyways, ive enjoyed watching that show Pap, good job. Although, i'm kinda concerned about Perogies episode.
I'm polish and i gotta say that those things doesn't really have much in common with real polish "perogies".

First of all, the name. We call it pierogi, so your version would be more like pierogies. But the most important, the food. To tell you the truth only your dough is almost the same as the original. We usually have couple of different kinds of fillings (not at the same time, though) made of:
  • meat
  • mushrooms & cabbage
  • meat & cabbage
  • cottage cheese
  • strawberries
  • blue berries
  • some other fruits
And there is one more kind of filling which is the closest to your version but we prepare it with potatoes, onions and cottage cheese. The funny part about it is that we call them "russian pierogies", so its not really polish dish. Wink
Another difference is that we do only boil them. Well, we fry them too, but only if we want to heat them up after they get cold, like we got some of them left and we wanna eat them next day.
Also, we use fried bacon with onions, but only to sprinkle the non-fruit-filling pierogies with it. And that's it.

I want to make one more thing clear... my intention is not to bash your version of pierogies, I just want to show you how are they prepared in Poland. Actually i think yours looked delicious and i would really like to taste them. Smiley

Ps. You can get Lomza beer maybe in like 5% of Poland. It's not really popular beer and i have no idea how did you get it in USA. Tongue The most popular and best are Tyskie, Zywiec, Lech, Debowe and Zobr.

I had a pole make perogies like this once, so they may not have been traditional...but they were yummy.  Smiley

We're actually getting ready to roll out the new site and we start filming again but with some new ammunition.  Who ever said beer was never free?  We have about a dozen micro breweries doing product placement and we're getting sponsorship.  So things are working out well.

I meant no disrespect regarding the perogies, I guess I feel the same way when people call a cheese pastry a Danish.
